Fresh Burrata with Roasted Cherry Tomatoes & Basil

Ingredients:

For the Roasted Tomatoes

2 cups cherry or grape tomatoes – whole or halved if larger

2 tablespoons olive oil – for roasting and enhancing flavor

1–2 cloves garlic, minced – adds aromatic depth

Salt and freshly ground black pepper – to taste

1 tablespoon balsamic vinegar (optional) – for sweetness and richness

For Assembly

8–10 fresh basil leaves, torn – bright, fragrant finishing herb

1–2 balls fresh burrata cheese – depending on desired portion size

Extra black pepper – for garnish

For Serving

Toasted baguette slices or garlic bread – ideal for scooping up the tomatoes and creamy burrata

Instructions

Roast the Cherry Tomatoes

Step 1 – Prep the Tomatoes

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Rinse and dry the cherry tomatoes thoroughly. If any are larger, slice them in half for even roasting.

Step 2 – Season

Place the tomatoes on the baking sheet and drizzle with olive oil.

Add the minced garlic, then season generously with salt and pepper.

Toss gently until everything is well coated.

Step 3 – Roast

Spread the tomatoes out in a single layer and roast for 20–25 minutes, until they begin to burst, wrinkle, and lightly caramelize.

Step 4 – (Optional) Add Balsamic

For a deeper, sweeter finish, drizzle the tomatoes with balsamic vinegar, then roast for an additional 2–3 minutes.

Prepare the Burrata

While the tomatoes roast, remove the burrata from its packaging and place it on a serving plate.
Let it sit at room temperature for 10–15 minutes so it softens and reaches peak creaminess.

Assemble the Dish

Step 1 – Plate the Tomatoes

Transfer the warm, roasted tomatoes to a shallow serving dish, creating a bed in the center.

Step 2 – Add the Burrata

Place the burrata gently on top of the tomatoes, allowing the creamy center to slowly spill as it warms.

Step 3 – Add the Basil

Tear fresh basil leaves by hand and scatter them over the warm tomatoes and burrata.

This releases their natural oils and intensifies their aroma.

Step 4 – Finish with Olive Oil & Pepper

Drizzle generously with extra-virgin olive oil and add a final sprinkle of freshly ground black pepper.

Serve

Serve immediately with slices of toasted baguette or garlic bread—perfect for scooping up the creamy burrata and roasted tomato juices.
