How to make it Mexican Street Corn with A Twist
4 tbsp Butter
1 small onion
I large container of chicken (4 cups) broth
4 cans of corn
1/2-1 cup Heavy whipping cream
1 cup chopped Cilantro
Rotisserie chicken (however much you want)
2 tbsp Cumin
1 tsp Chili powder
5 cloves of garlic
3 tbsp flour
Sauté your onions and jalapeños in butter for about 5 minutes then add your 5 cloves of minced garlic for about a minute.
Stir in your flour, cumin, chili powder and cook the flour taste out, about 1-2 minutes.
Add the chicken broth and whisk it (if it’s too thick, you can add more)..
Add your chicken, corn, salt and pepper to taste (I liked to add in a little chipotle chili powder) then bring to a boil..
Turn off and stir in the cream and cilantro..
Top with the cotija cheese, bacon and some jalapeños if you like
